Indonesian food. Dried Shrimp Pempek.

This types of the ''Fishskin pempek'' , but instead are made with ''dos pempek'' namely:
''Dried Shrimp Pempek''.

Making ''dried shrimp pempek'' is just like a small ''submarine pempek'' or ''papayah pempek''.

Ingredients:
* basic dough ''dos pempek''.
* 300 grams of dried shrimps.

How to make:
*Grind dried shrimp,set aside on a plate.
Make the dough into shapes ''dos pempek'' balls ping pong balls in dried shrimp finely enter only 1 teaspoon,or to taste.
Heat a skillet, containing oil let it heat.
Enter pempek & fry until color changes yellow enough then drain.
Serve, & don't forget cuko sause to eating it.

the ''Dos pempek''.
''Dos pempek'' is called because when the fry are usually issued a blast rang ''dos dos dos'' , so be careful when we fry, because of the hot cooking oil can squirt with skin & if not careful.

Prepare:
* make basic dough pempek don't use the fish,just use tapioca flour alone.

To add flavor needs to be added:
* instant fish broth,or other flavored seasonings.

What's the difference pempek taste with fish?
The difference is:
''Dos Pempek'' more chewy & tough, because there are is no fish protein.
Because of not using fish, then the batter ''dos pempek'', can be made for all sorts of different pempek & it's variations.

How to reduce tough & chewy?
How;mix with flour. The comparison is 4:1 or 3:1.

How to make the Lenjer pempek.
Ingredients:
* basic dough recipe pempek.

How to make:
* shape dough pempek like pieces of wood,round & long.

* boil until cooked floating & then chill.

Variation of this pempek sausage,but it looks like pempek lenjer,but sausage wrapped in dough pempek.
How to cook & serve it the same as above.

How to make:

Ingredients:
* 1/2 recipe basic dough pempek.

* 1/2 teaspoons baking soda.

* 200 grams of minced fish skin,scales removed.

* 100 grams of noodles.

* cucumber slices & cuko sause.

How to make:
* combine basic dough pempek,baking soda.
Leather which has been chopped.

* stir until all mixed.

* in around shape,rounded thin.

* fry until cooked & serve with cuko sauce & cucumber slices.

Note: If you more soft,add eggs 2-3 eggs, beaten & put in the dough.

How to make the grilled or roasted pempek?

Prepare ingredients:
* 1/2 basic dough recipe & 1 teaspoon baking soda.

Method:
* mix dough with baking soda pempek ago in a round flat shape.

* back in the coals until browned.

* if no grill, use a non-stick frying pan,close the pan & cook over low head until cooked.

* then,serve with cuko sauce,or pempek in the split second from side, the contents of soy sauce which is mixed a little cayenne pepper & a sprinkling of finely powdered dried shrimp.

How to make the Submarine pempek or eggs pempek?

* Prepare the basic dough pempek.

* 8 eggs,can duck or chicken eggs.

* 100 grams of wet noodles washed in warm water immersion.

* 2 tablespoons dried shrimp powder,that is powder made from small shrimp in the puree & then in the dry.

* Cucumber slices.

* & don't forget Cuko sauce.

How to make:
* take 150 grams of the basic dough pempek(this for make large size).

* then in the form of several such bowls.

* then a bowl-shaped dough & fill with 1 egg.

* cover the eggs in the dough with a way of uniting the upper part of this bowl shaped dough,the goal for eggs in the dough & could not get out,or does not leak.

* boil in boiling water until the dough floats.

* if dough floats means pempek have matured,remove & let cool pempek.

* pempek be cut into pieces & serve with Cuko sauce, sliced cucumber, noodles, & a sprinkling of dried shrimp powder.

Indonesian food. Basic Dough Ingredients to Make Pempek.

Before we make food Pempek,we must make the basic dough ingredients first.

Now we will make it.
Ingredients:
* Fish in a bowl of puree, fish bone should be in the waste, & that is in use only fish meat only.
* 1 cup white water.
* salt to taste.
* 2 tablespoons cooking oil.
* 1 cup tapioca flour taste.

Directions:
Mix water & salt with fish that have been in the puree.
Add tapioca flour until dough can taste in the form.
If you like chewy foods, you can use flour pretty much your own.
Basic dough ingredients Pempek now ready to use.

To make Pempek submarine(Pempek kapal selam), take dough as necessary, until dough forms suck as bowl-shaped,filled with raw eggs, then cover tightly using the above mixture until the eggs are not visible anymore.
And now that crude finished Pempek made.
Then Pempek crude boiled in boiling water with fire is not great, if Pempek that the stew had been cooked fload means.

If you don't like the Pempek that in boiled, you can fry it Pempek,but don't fry too long,fry a few minutes.

Indonesian food. Cuko Sauce to Eating Pempek.

Liquid sauce to eat food ''Pempek'' called ''Cuko sauce'' .
Eat ''Pempek'' without ''Cuko sauce'' will taste less delicious, but if we take ''Pempek & Cuko sauce'' the taste will very tasty. Prove it!

How do I make it?

The trick as follows.
Ingredients:
* 500 grams of brown sugar/dark brown sugar.
* 50 grams tamarind.
* 4 teaspoons white viregar or viregar to eat.
* 5 cups water.
* 5-8 cloves of garlic in small pieces or puree.
* 2 tablespoons small shrimp that has been in the puree and the dry.

Method:

Stir the sauce every time when we will eat ''Pempek''.

Many types of ''Pempek'' in the ''Palembang City'', the ''Pempek'' has made various types of changes but it feels different though still tasty and very delicious.

Indonesian food. History of foods Pempek or Empek-empek.

Historically, there have been '' Pempek'' from Palembang City in Indonesian, since the entry of chinese immigrants, since the chinese people came to the Palembang city, which is around the 16th century, when Sultan Mahmud Badaruddin II ruling Palembang city Sultanate Darussalam. Name ''Pempek or empek-empek'' in believe comes from the term about the year 1617 a 65-year-old musty living in the assembly or the banks of the ''Musi River'' in Palembang City, feeling sorry waching the abundant catches of fish in the ''Musi River''.
The catch is it has not been entirely put to good use, only limited in food made of fried fish and also often in a stew cooked with mixed herbs in particular that is called evaporation, moldy then try another treatment alternative. He minced fish meat mixed with tapioca flour, so as to produce a new food.

In further developments, in use also other types of river fish,too type of sea fish, so these foods can be made using various types made of fish.
